Desert Heat: Big air
Go to the shortcut by the gas station in two player mode. You will see a lot of cactuses and trees. Go toward them and jump up. Try to get stuck on the roof of the gas station. If you get on the gas station's roof, stay there. You will still be in the air. You can have the other player knock you off of the roof.

This was the best Need for Speed by FAR.

Also tied with Burnout 3: Takedown, these two games are the best arcade racers ever made.
