To skip the last lap of a race. In Multiplayer mode, you do not need to complete the final lap of a race in order to win. When you pass the finish line to start the last lap of the race, simply turn around and re-cross the line. This will allow you to win the game or race without finishing the last lap. Of course when you friend figures this out it will be a race to see who can do it first.

I loved this game when I was younger, I hope either it gets a VC release or I can find it somewhere for my N64...
