Meh Sonic Adventure was the epitome of Sonic.
Classic Sonic was an attempt by Sega to one-up (no pun intended) Mario. The levels weren't about exploring a 2d world as much as they were for seeing how long you could hold right on the D-pad.
There is plenty of exploration and multiple paths in 2D Sonic games. In fact, your goal is to find an upper path that would allow you to clear the stage as quickly as possible. Being a speed-based platformer being able to hold right on the d-pad to clear a level as quickly as possible without interruptions, was the challange and the point. Aside from finding new paths, there were also special stages, and in the case of Sonic CD, various objects you had to find in every stage to get a perfect ending.
